Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 4 large tortillas
  • 1 avocado, sliced
  • 1 cup salsa

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add bell pepper, corn, and black beans, and cook for about 5 minutes, stirring occasionally.
  3. Stir in cumin and chili powder, cooking for an additional minute.
  4. Lay out the tortillas and fill each with rice, the bean mixture, and slices of avocado.
