  • 4 almond croissants
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups all-purpose flour
  • ½ cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas.
  3. Tear the almond croissants into pieces and add them to the mashed bananas.
  4. In another bowl, cream together the sugar and butter until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. Add the banana and croissant mixture to the wet ingredients.
  8. In a separate bowl, mix the flour, baking soda, and salt.
  9. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  10. Fold in the sliced almonds.
  11. Pour the batter into a greased loaf pan.
  12. Bake for 60-70 minutes or until a toothpick comes out clean.
  13. Allow to cool before slicing.
