Barclay’s Kefir Pancakes

A delightful pancake recipe using kefir for a unique twist.

Ingredients

  • 1 cup kefir
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 2 tbsp melted butter

Instructions

  1. In a bowl, mix kefir and egg until combined.
  2. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Combine wet and dry ingredients, being careful not to overmix.
  4. Heat a non-stick skillet over medium heat and add a bit of butter.
  5. Pour 1/4 cup of batter onto the skillet and cook until bubbles form.
  6. Flip and cook until golden brown. Repeat with remaining batter.

Notes

  • For extra fluffiness, let the batter rest for 10 minutes.
  • Top with fresh fruit or syrup for added flavor.
