Best Ever Instant Pot Beef Stew

This beef stew is your go-to comfort food, made effortlessly in an Instant Pot.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and brown the beef cubes.
  2. Add the onions and garlic, cooking until fragrant.
  3. Stir in the tomato paste, thyme, and bay leaves.
  4. Pour in the beef broth and add the carrots and potatoes.
  5. Seal the lid and set the pot to cook on high pressure for 35 minutes.
  6. Allow natural release for 10 minutes, then quick release the remaining pressure.
  7. Remove the bay leaves and season with salt and pepper before serving.

Notes

  • For thicker stew, you can blend a portion and stir it back in.
