Instructions

  1. In a large bowl, combine black-eyed peas, diced tomatoes, bell peppers, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
