Biscuit & Vegetable Pot Pie (Casserole)

A warm and comforting dish that combines flaky biscuits with a variety of vegetables in a savory sauce.

  • 1 tablespoon olive oil
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package refrigerated biscuit dough

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add carrots, celery, onion, and garlic. Sauté until vegetables are tender.
  3. Stir in flour and cook for 1 minute.
  4. Add vegetable broth, bring to a simmer, and add peas, corn, thyme, salt, and pepper. Cook until the mixture thickens.
  5. Pour the vegetable mixture into a casserole dish.
  6. Top with biscuit dough, breaking it into pieces if needed.
  7. Bake for 25-30 minutes until biscuits are golden brown.

Notes

  • For a richer flavor, add a splash of soy sauce to the vegetable mixture.
  • You can use any combination of vegetables you like.
