  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 4 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup salsa

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage until browned. Remove and set aside.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Pour the egg mixture into the skillet and scramble until fully cooked.
  5. Lay a corn tortilla flat, add some sausage, scrambled eggs, and cheese. Roll and place in a greased baking dish.
  6. Repeat until all tortillas are filled.
  7. Pour salsa over the top and sprinkle with remaining cheese.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.
