- 8 corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled breakfast sausage
- 4 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup salsa
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the sausage until browned. Remove and set aside.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet and scramble until fully cooked.
