Budae Jjigae (Korean Army Stew)

Budae Jjigae is a delicious and hearty Korean dish originally created using surplus foods from U.S. military bases. This version features turkey bacon and chicken ham for a healthier twist.

Ingredients

  • 1 pound turkey bacon
  • 1 pound chicken ham
  • 1 cup kimchi
  • 2 cups vegetable broth
  • 1 package instant ramen noodles
  • 1 cup tofu, cubed
  • 2 green onions, chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. In a large pot, cook the turkey bacon and chicken ham until browned.
  2. Add the kimchi and vegetable broth to the pot and bring to a boil.
  3. Stir in the ramen noodles and tofu, cooking until noodles are tender.
  4. Add gochujang, soy sauce, and sesame oil, and mix well.
  5. Garnish with green onions and serve hot.

Notes

  • For a spicier stew, increase the amount of gochujang.
  • Serve with rice for a complete meal.
