Cheesy Roasted Garlic Mashed Potatoes

  • 2 pounds russet potatoes
  • 1 whole bulb of garlic
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the whole garlic bulb in foil and roast for 30-35 minutes until soft.
  3. Peel and chop the russet potatoes, then boil them in salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Squeeze the roasted garlic cloves out of their skins into the pot with the potatoes.
  6. Add the shredded cheddar cheese, sour cream, milk, butter, salt, and pepper.
  7. Mash everything together until smooth and creamy.
  8. Serve warm, garnished with additional cheese if desired.
