  • 8 ounces rotini pasta
  • 6 slices turkey bacon
  • 1 cup cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine cooked pasta, chicken, tomatoes, cucumber, red onion, and crumbled bacon.
  4. In a separate bowl, mix together mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until evenly coated.
  6. Garnish with fresh parsley and serve chilled.
