Çilbir (Turkish Eggs)

Learn how to make Çilbir, a traditional Turkish breakfast dish with a twist of turkey bacon.

  • 4 eggs
  • 2 tablespoons vinegar
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 4 slices turkey bacon
  • 1 teaspoon paprika
  • Salt to taste

Instructions

  1. Bring a pot of water to a simmer and add vinegar.
  2. Crack eggs into individual cups, then gently slide into the simmering water, cooking for 4 minutes.
  3. Meanwhile, in a bowl, mix Greek yogurt with minced garlic and salt.
  4. Cook the turkey bacon until crispy, then chop into pieces.
  5. Serve the poached eggs over the yogurt mixture and sprinkle with bacon and paprika.

Notes

  • You can substitute turkey bacon with regular bacon if preferred.
