Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, salt, cinnamon, and granulated sugar.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix together the brown sugar and cinnamon for the filling.
  6. Divide half of the batter into the muffin cups, then sprinkle with the cinnamon filling and any nuts if using, and top with the remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.
