  • 34 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Season the roast with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and sear the roast on all sides.
