  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 1/4 cup lime juice
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Add the dry ingredients to the butter mixture alternately with coconut milk, starting and ending with the flour mixture.
  6. Fold in the shredded coconut and vanilla extract.
  7. Spoon the batter into the prepared cupcake liners and bake for 18-20 minutes.
  8. Let the cupcakes cool completely.
  9. For the frosting, beat together the softened butter and powdered sugar until smooth.
  10. Add lime juice and zest, and mix until well combined.
  11. Frost the cooled cupcakes with lime buttercream frosting.

Notes

  • For extra coconut flavor, you can add more shredded coconut to the batter.
  • These cupcakes can also be topped with toasted coconut for garnish.
