Coconut Rum (Coquito) Tiramisu

Coconut Rum (Coquito) Tiramisu is a delightful dessert that combines the traditional flavors of tiramisu with the tropical essence of coconut rum. This rich and creamy treat is perfect for any occasion.

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup coconut rum
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder
  • 1/4 cup toasted coconut flakes

Instructions

  1. In a mixing bowl, combine coconut milk, heavy cream, mascarpone cheese, coconut rum, sugar, and vanilla extract. Whisk until smooth.
  2. Dip each ladyfinger into the mixture briefly, then layer them in a serving dish.
  3. Spread half of the coconut mixture over the layer of ladyfingers.
  4. Add another layer of dipped ladyfingers and top with the remaining coconut mixture.
  5. Chill in the refrigerator for at least 4 hours, or overnight for best results.
  6. Before serving, dust with cocoa powder and sprinkle with toasted coconut flakes.

Notes

  • For a non-alcoholic version, omit the coconut rum or replace it with extra coconut milk.
