Coconut Salmon Curry

A delicious coconut salmon curry that brings the flavors of the tropics to your weeknight dinner.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 1 pound salmon fillets
  • 1 cup spinach
  • 1 tablespoon lime juice

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the chopped onion, and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add curry powder and coconut milk, and let it simmer.
  5. Add the salmon fillets and cook for about 10-15 minutes until cooked through.
  6. Stir in the spinach and lime juice just before serving.
