  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, starting and ending with the flour mixture.
  6. Fill the muffin cups about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, sprinkle a mixture of sugar and cinnamon on top of the muffins before baking.
  • These muffins can be frozen for up to three months.
