  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugars, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream the butter until smooth, then add the eggs, sour cream, and vanilla extract.
  4. Gradually combine the wet and dry ingredients until just mixed.
  5. Pour the batter into muffin pans, filling them about 3/4 full.
  6. Bake for 20-25 minutes or until golden.
  7. Allow to cool before serving.

Notes

  • For extra indulgence, add a streusel topping made from butter, sugar, and flour.
  • These muffins can be made ahead and frozen for later use.
