  • 1 cup rice
  • 1 cup apple juice
  • 1/2 cup cranberries
  • 1 onion, chopped
  • 2 apples, chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

  • 2 tbsp unsalted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pot, cook the rice according to package instructions.
  3. In a separate skillet, melt butter and sauté onions and apples until soft.
  4. Add cranberries, cinnamon, salt, and pepper to the skillet, and mix with the cooked rice.
  5. Stuff the mixture into the Cornish hens.
