- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 lime, juiced
- 2 cups spinach
- 1 tablespoon sesame oil
- Heat sesame oil in a pot over medium heat. Add onion, garlic, and ginger, sauté until softened.
