  • 4 cups vegetable broth

  • 1 tablespoon ginger, grated

  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 lime, juiced
  • 2 cups spinach
  • 1 tablespoon sesame oil

Instructions

  1. Heat sesame oil in a pot over medium heat. Add onion, garlic, and ginger, sauté until softened.

  3. Add red lentils, vegetable broth, coconut milk, soy sauce, and maple syrup. Bring to a boil.
