  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups corn, fresh or frozen
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add olive oil, onion, carrots, and celery. Sauté until soft.
  3. Add garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the heavy cream and corn, then stir in the spices.
  6. Simmer for 20 minutes, stirring occasionally.
  7. Serve hot, garnished with crumbled bacon and parsley.

Notes

  • For a spicier kick, add diced jalapeños.
  • Substitute chicken ham with regular ham if preferred.
