  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Add the onion and garlic, cooking until softened.
  2. Stir in the chicken broth, crushed tomatoes, Italian seasoning, and bring to a simmer.
  3. Add the broken lasagna noodles and cook until al dente, about 10 minutes.
  4. Stir in the heavy cream, mozzarella, and Parmesan cheese until melted and creamy.
  5. Add the spinach and cook until wilted. Season with salt and pepper to taste.
