  • 8 ounces fettuccine
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Place the salmon fillet in the skillet and cook for about 5 minutes on each side, or until cooked through. Remove from the skillet and flake into large pieces.
  5. In the same skillet, reduce the heat and add the heavy cream. Stir in the grated parmesan cheese until melted and smooth.
  6. Add the flaked salmon and cooked fettuccine to the sauce, tossing gently to combine. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.
