Creamy Tuscan Salmon (30 Minute Dinner!)

A delicious and quick creamy Tuscan salmon recipe that can be prepared in just 30 minutes.

Ingredients

  • 2 fillets salmon
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, and add them to the skillet.
  3. Cook the salmon for about 4-5 minutes per side until it is cooked through.
  4. Remove salmon from the skillet and set aside.
  5. In the same skillet, add garlic and sauté for 30 seconds.
  6. Add sun-dried tomatoes and spinach, stirring until the spinach wilts.
  7. Pour in the heavy cream and Italian seasoning, then stir to combine.
  8. Return the salmon to the skillet and cook for an additional 2 minutes.
  9. Serve the creamy sauce over the salmon.
