  • 4 large eggs
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 green onions, sliced

Instructions

  1. Begin by boiling the eggs in a pot of water for about 10-12 minutes. Once done, cool them in ice water.
  2. Fry the turkey bacon in a skillet until crispy. Once cooked, chop it into small pieces.
  3. In a mixing bowl, peel the cooled eggs and chop them coarsely.
  4. Add the mayonnaise, Dijon mustard, dill, salt, pepper, lemon juice, and green onions to the eggs. Stir until combined.
  5. Gently fold in the chopped turkey bacon.
  6. Serve on bread, lettuce, or on its own, and enjoy!
