  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 8 ounces cream cheese
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 12 ounces pasta (penne or fusilli)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In the crock pot, place chicken breasts and sprinkle with Cajun seasoning.
  2. Add cream cheese, chicken broth, heavy cream, green bell pepper, onion, mushrooms, and garlic on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  4. Remove chicken, shred it with two forks, and return to the pot.
  5. Cook pasta according to package instructions, then stir it into the sauce in the crock pot.
  6. Mix in shredded cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a spicier dish, add more Cajun seasoning or diced jalapeños.
  • You can use any pasta shape you prefer!
