- 1 pound boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 8 ounces cream cheese
- 2 cups chicken broth
- 1 cup heavy cream
- 12 ounces pasta (penne or fusilli)
- 1 cup shredded cheddar cheese
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 1/2 cup sliced mushrooms
- 2 cloves garlic, minced
- Salt and pepper to taste
- In the crock pot, place chicken breasts and sprinkle with Cajun seasoning.
- Add cream cheese, chicken broth, heavy cream, green bell pepper, onion, mushrooms, and garlic on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Remove chicken, shred it with two forks, and return to the pot.
- Cook pasta according to package instructions, then stir it into the sauce in the crock pot.
- Mix in shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier dish, add more Cajun seasoning or diced jalapeños.
