Crock pot Vegetarian Chili Recipe

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and sauté until softened.
  2. Transfer the sautéed mixture to the crock pot.
  3. Add the bell pepper, diced tomatoes, beans, corn, chili powder, cumin, salt, and black pepper.
  4. Pour in the vegetable broth and stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Stir before serving and enjoy!
