Crunchy Thai Quinoa Salad

A vibrant and healthy salad that combines the nutty flavor of quinoa with crunchy vegetables and a zesty dressing, perfect for a light meal or side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup carrots, shredded
  • 1 cup red cabbage, shredded
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, chopped

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until liquid is absorbed.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine cooled quinoa, bell pepper, cucumber, carrots, red cabbage, green onions, and cilantro.
  5. In a small bowl, whisk together the dressing ingredients and pour over the salad. Toss to combine.
  6. Sprinkle chopped peanuts on top before serving.

Notes

  • For extra flavor, add a splash of lime juice or soy sauce to the dressing.
  • Feel free to add other vegetables you enjoy.
