- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup red bell pepper, diced
- 1 cup cucumber, diced
- 1 cup carrots, shredded
- 1 cup red cabbage, shredded
- 1/2 cup green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanuts, chopped
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until liquid is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cooled quinoa, bell pepper, cucumber, carrots, red cabbage, green onions, and cilantro.
- In a small bowl, whisk together the dressing ingredients and pour over the salad. Toss to combine.
- Sprinkle chopped peanuts on top before serving.
