  • 1/2 cup brewed espresso
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, espresso, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips.
  6. Line a muffin tin with paper liners and fill each cup about two-thirds full with batter.
  7. Bake for about 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let muffins cool in the pan for a few minutes before transferring to a wire rack.
