  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs and sugar until fluffy. Mix in pumpkin and vanilla.
  4. Gradually add dry ingredients to the wet mixture until well combined.
  5. Spread the batter evenly on the prepared baking sheet.
  6. Bake for 15-20 minutes until golden. Remove from the oven and let cool for a few minutes.
  7. Invert onto a clean towel dusted with powdered sugar. Roll it up and let it cool completely.
  8. For the filling, beat cream cheese, butter, powdered sugar, and vanilla together until smooth.
  9. Unroll the cooled pumpkin roll and spread the filling over the surface. Roll it back up and refrigerate.
