Easy Slow Cooker Lentil Soup

A simple and nutritious lentil soup made in a slow cooker, perfect for any day of the week.

Ingredients

  • 1 cup lentils
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups spinach, chopped

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. Add all ingredients except spinach to the slow cooker.
  3. Stir well and cover with the lid.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. In the last 30 minutes of cooking, add the chopped spinach.
  6. Season with additional salt and pepper to taste before serving.
