- 1 cup lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups spinach, chopped
- Rinse the lentils under cold water and set aside.
- Add all ingredients except spinach to the slow cooker.
- Stir well and cover with the lid.
- Cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes of cooking, add the chopped spinach.
