Eggnog Panna Cotta with Spiked Cranberry Sauce

Ingredients

  • 2 cups heavy cream
  • 1 cup eggnog
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 packet gelatin
  • 1/4 cup water
  • 1 cup fresh cranberries
  • 1/4 cup orange juice
  • 1/4 cup spiced rum
  • 1/2 cup sugar (for cranberry sauce)

Instructions

  1. In a saucepan, combine the heavy cream, eggnog, sugar, and vanilla extract, and heat over medium heat.
  2. In a small bowl, dissolve gelatin in water and let it sit for 5 minutes.
  3. Once the cream mixture is warm, remove from heat and stir in the gelatin until fully dissolved.
  4. Pour the mixture into serving glasses and refrigerate for at least 4 hours or until set.
  5. For the cranberry sauce, combine fresh cranberries, orange juice, and sugar in a saucepan and simmer until the cranberries burst.
  6. Stir in spiced rum and cook for another few minutes. Let it cool.
  7. Once panna cotta is set, top with spiked cranberry sauce before serving.

Notes

  • For a firmer panna cotta, use an additional packet of gelatin.
  • Feel free to replace spiced rum with bourbon if preferred.
