  • 2 English muffins, split and toasted
  • 2 cups fresh spinach
  • 1/2 cup hollandaise sauce
  • 1 tablespoon white vinegar
  • 1 tablespoon butter
  • Salt to taste

Instructions

  1. Bring a pot of water to a gentle simmer and add vinegar.
  2. Crack each egg into a small bowl and gently slide into the water.
  3. Poach eggs for 3-4 minutes until whites are set but yolks are still runny.
  4. While eggs are cooking, sauté spinach in butter until wilted.
