A refreshing salad combining figs, fennel, and grains, topped with a citrus dressing.

Ingredients

  • 2 cups cooked quinoa
  • 1 cup fresh figs, sliced
  • 1 bulb fennel, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 orange, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine cooked quinoa, figs, fennel, and walnuts.
  2. In a separate bowl, whisk together olive oil, honey, apple cider vinegar, orange juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for 30 minutes for flavors to blend.

Notes

  • Adjust the sweetness of the dressing by adding more or less honey to taste.
  • This salad can be made a day in advance; just add the dressing right before serving.
