Flourless Sweet Potato Ginger Cake

  • 1 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, combine the mashed sweet potatoes, almond flour, honey or maple syrup, melted coconut oil, eggs, ground ginger, cinnamon, baking soda, salt, and vanilla extract.
