Fluffy Japanese Soufflé Pancakes

  • 4 large eggs
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1 tablespoon unsalted butter

Instructions

  1. Separate the egg whites from the yolks and place them in different mixing bowls.
  2. In the bowl with yolks, whisk in sugar, vanilla extract, milk, and baking powder until well combined.
  3. Gradually fold in the flour until smooth.
  4. In the other bowl, beat the egg whites until soft peaks form.
  5. Gently fold the egg whites into the yolk mixture until no white streaks remain.
  6. Preheat a non-stick skillet over low heat and grease it with butter.
  7. Pour a ladleful of the batter onto the skillet and cook for about 4-5 minutes until bubbles form on the surface.
  8. Carefully flip the pancake and cook for another 3-4 minutes.
  9. Repeat with the remaining batter.
