  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon grated fresh ginger

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, beat butter and brown sugar until creamy. Add molasses, egg, and vanilla; mix well.
  4. Gradually add dry ingredients to the wet mixture, blending until combined.
  5. Roll dough into balls and place on a baking sheet. Flatten slightly.
  6. Bake for 8-10 minutes or until edges are firm. Let cool on a wire rack.
  7. To make the filling, beat powdered sugar, heavy cream, and grated ginger until smooth.
  8. Spread filling between two cookies to create a sandwich.

Notes

  • For an extra kick, add more fresh ginger to the filling.
  • These cookies can be decorated with icing for a festive touch.
