  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium-high heat.
  2. Season chicken with olive oil, lemon juice, oregano, salt, and pepper.
  3. Grill chicken for 6-7 minutes on each side until fully cooked, then slice.
