Greek Chicken Stuffed Peppers

  • 4 large bell peppers
  • 1 pound ground chicken
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat, add ground chicken and cook until browned.
  4. Add cooked quinoa, diced tomatoes, feta cheese, black olives, oregano, garlic powder, salt, and pepper. Stir well to combine.
  5. Stuff each bell pepper with the chicken mixture and place in a baking dish.
  6. Bake for 25-30 minutes, until the peppers are tender.
  7. Remove from oven and let cool slightly before serving.

Notes
