- 4 large bell peppers
- 1 pound ground chicken
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat, add ground chicken and cook until browned.
- Add cooked quinoa, diced tomatoes, feta cheese, black olives, oregano, garlic powder, salt, and pepper. Stir well to combine.
