Greek Yogurt Chocolate Chip Oatmeal Muffins (gluten-free)

A deliciously indulgent recipe for gluten-free muffins made with Greek yogurt and chocolate chips.

Ingredients

  • 1 cup gluten-free oats
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the gluten-free oats, Greek yogurt, honey, almond flour, baking powder, baking soda, and salt until well mixed.
  3. Fold in the mini chocolate chips.
  4. Divide the mixture evenly among the muffin cups.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • For a sweeter muffin, increase the honey to 1/3 cup.
  • Feel free to substitute any type of yogurt as needed.
