Ground Beef Zucchini Casserole

A hearty and comforting dish that combines ground beef and zucchini in a flavorful casserole.

  • 2 medium zucchinis, sliced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Add onion and garlic, cooking until softened.
  4. Stir in the diced tomatoes, zucchini, Italian seasoning, salt, and pepper.
  5. Transfer mixture to a casserole dish and top with shredded cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

  • This dish can be easily adjusted by adding different vegetables.
