Healthy Grilled Mediterranean Bowl

Ingredients

  • 2 cups water
  • 1 tablespoon olive oil
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Meanwhile, heat olive oil in a grill pan over medium heat.
  5. Add zucchini, bell peppers, and cherry tomatoes; season with salt, pepper, and oregano.
  6. Grill vegetables until tender and slightly charred.
  7. Fluff the cooked quinoa with a fork and transfer to serving bowls.
  8. Top with grilled vegetables, feta cheese, and olives.
  9. Serve warm and enjoy!
