  • 2 tablespoons coconut oil
  • 3 tablespoons honey or maple syrup
  • 1 cup cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh raspberries
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut oil, and honey until it forms a crust.
  3. Press the mixture into the bottom of a greased baking dish and bake for 10 minutes.
  4. In another bowl, combine cream cheese, Greek yogurt, raspberries, eggs, vanilla extract, and lemon juice.
  5. Pour the filling over the baked crust and smooth it out.
  6. Bake for an additional 25-30 minutes until set.
  7. Let it cool completely in the pan before cutting into bars.
