- 2 boneless, skinless chicken breasts
- 1 red bell pepper chopped
- 1 zucchini sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups vegetable broth
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chicken with olive oil, paprika, cayenne, salt, and pepper.
- Place the chicken on a baking sheet.
