  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper chopped
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chicken with olive oil, paprika, cayenne, salt, and pepper.
  3. Place the chicken on a baking sheet.
  4. In the same bowl, combine the chopped bell pepper, zucchini, and cherry tomatoes with olive oil, salt, and pepper. Spread them on the baking sheet with the chicken.
  5. Roast in the oven for 25-30 minutes, or until the chicken is cooked through.
  6. While the chicken and vegetables roast, cook the quinoa in vegetable broth according to package instructions.
  7. Once done, slice the chicken and serve over a bed of quinoa with the roasted veggies.

  • For additional flavor, marinate the chicken overnight.
