- 1 whole chicken
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup olives, pitted and halved
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine olive oil, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the chicken and place it in a roasting pan.
- In a separate bowl, mix olives, orange zest, lemon zest, and juices.
- Spoon the olive mixture around the chicken in the pan.
- Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken and let it rest for 10 minutes before carving.
