Herb Roasted Chicken with Warm Olives and Citrus

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup olives, pitted and halved
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine olive oil, salt, pepper, rosemary, and thyme.
  3. Rub the mixture all over the chicken and place it in a roasting pan.
  4. In a separate bowl, mix olives, orange zest, lemon zest, and juices.
  5. Spoon the olive mixture around the chicken in the pan.
  6. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken and let it rest for 10 minutes before carving.
