  • 1 pound calamari, cleaned and sliced
  • 1 cup cherry tomatoes, halved

  • 1 cup bell peppers, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Cook shrimp and calamari until just cooked, about 2-3 minutes.
  2. Drain and rinse under cold water to stop the cooking process.
  3. In a large bowl, combine shrimp, calamari, cherry tomatoes, red onion, bell peppers, and parsley.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  5. Pour dressing over salad and toss gently to combine.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For a spicier kick, add red pepper flakes to the dressing.
