Jalapeno Popper Potato Salad

A creamy and spicy take on potato salad with jalapenos, bacon, and cheese.

  • 2 pounds potatoes
  • 4 strips turkey bacon
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup diced jalapenos
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions
  • 1 tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Boil potatoes until tender; drain and cool.
  2. Cook turkey bacon until crispy; crumble.
  3. In a large bowl, combine mayonnaise, sour cream, mustard, garlic powder, and pepper.
  4. Add cooled potatoes, jalapenos, cheese, green onions, and bacon to the mixture; stir gently.
  5. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Adjust jalapeno quantity for desired spiciness.
