Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. Add onion and garlic, sautéing until fragrant.
  5. Layer the carrots and potatoes in the pot.
  6. Pour in the beef broth and Worcestershire sauce, then add thyme and bay leaf.
