- 3 to 4 pounds chuck roast
- 2 tablespoons vegetable oil
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 4 cloves garlic, minced
- 1 large onion, chopped
- 3 carrots, cut into chunks
- 3 celery stalks, cut into chunks
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Season the roast with salt and pepper, then sear it on all sides in the hot oil.
- Remove the roast and set it aside. In the same pot, sauté the onion and garlic until translucent.
- Add the carrots, celery, and thyme, mixing well.
- Return the roast to the pot and add the beef broth and Worcestershire sauce. Add bay leaves.
- Cover and transfer the pot to the preheated oven. Cook for 3-4 hours until the meat is tender.
- Remove from oven and let rest before slicing.

- For extra flavor, add red wine to the broth.
