Juicy Dutch Oven Pot Roast

A delicious and hearty pot roast recipe that will surely become a family favorite, made easily in a Dutch oven.

Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 3 carrots, cut into chunks
  • 3 celery stalks, cut into chunks
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  3. Season the roast with salt and pepper, then sear it on all sides in the hot oil.
  4. Remove the roast and set it aside. In the same pot, sauté the onion and garlic until translucent.
  5. Add the carrots, celery, and thyme, mixing well.
  6. Return the roast to the pot and add the beef broth and Worcestershire sauce. Add bay leaves.
  7. Cover and transfer the pot to the preheated oven. Cook for 3-4 hours until the meat is tender.
  8. Remove from oven and let rest before slicing.

Notes

  • For extra flavor, add red wine to the broth.
  • Serve with mashed potatoes for a complete meal.
