Korean Style Pot Roast Recipe

  • 3 pounds beef chuck roast
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup onions, quartered
  • 1 cup scallions, chopped

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat sesame oil over medium-high heat.
  3. Season the beef with salt and pepper, then sear until browned on all sides.
  4. Remove the beef and set aside. In the same pot, sauté onions, garlic, and ginger until fragrant.
  5. Add soy sauce, gochujang, and beef broth, stirring to combine.
  6. Return the beef to the pot, add carrots, and bring to a simmer.
  7. Cover and transfer to the oven, cooking for 3 hours.
  8. Once done, let it rest before slicing.
  9. Serve with scallions sprinkled on top.

Notes

  • For extra flavor, marinate the beef overnight.
  • This dish pairs well with rice.
