- 3 pounds beef chuck roast
- 2 tablespoons soy sauce
- 1 tablespoon gochujang
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 inch ginger, sliced
- 2 cups beef broth
- 1 cup carrots, chopped
- 1 cup onions, quartered
- 1 cup scallions, chopped
- Preheat the oven to 325°F (165°C).
- In a large Dutch oven, heat sesame oil over medium-high heat.
- Season the beef with salt and pepper, then sear until browned on all sides.
- Remove the beef and set aside. In the same pot, sauté onions, garlic, and ginger until fragrant.
- Add soy sauce, gochujang, and beef broth, stirring to combine.
- Return the beef to the pot, add carrots, and bring to a simmer.
- Cover and transfer to the oven, cooking for 3 hours.
- Once done, let it rest before slicing.
- Serve with scallions sprinkled on top.
